We use aged Shingen chicken from Yamanashi Prefecture that has been aged at a low temperature. Ice temperature aging means that by letting the ingredients rest at a temperature just before freezing, an antifreeze substance containing amino acids and umami ingredients is produced by a defensive reaction that prevents freezing. Save it and it will be a safe and secure delicious chicken.
